Perfumed with mineral, citrus and floral characteristics with a hint of savouriness, the palate is bone dry with fresh crisp fruit a smooth creaminess leading through to a wonderful aromatic peach and citrus component on the finish with clean acidity. A complex and subtle wine with a lingering savoury and mineral flavour.
ABOUT THE WINE
The fruit is hand harvested and hand sorted. The fruit is whole bunch pressed, then settled for 12 hours prior to racking to a combination of tank and barrel (50/50). Fermentation is long and slow, with the various blocks fermented separately and aged on lees for nine months prior to racking and blending.Varietal: Sauvignon Blanc
